Our Story
Fresh Wraps Built to Make Mom Proud
Fresh handheld wraps and salads for offices, schools, teams, and family events everywhere we can drive.
Every wrap is cooked fresh to order with crisp produce and real ingredients, then served fast from the window so your line keeps moving. From the Classic BLT to the Mediterranean, it's a lighter food truck option that still leaves guests full.
Our Story
From mac and cheese to fresh wraps
Capital City Wraps started in 2020 after years of running two mac 'n cheese food trucks. We were ready for something different, something that reflected what our own family actually likes to eat β and my wife's favorite food has always been a good sandwich or salad. So we built this concept as a tribute to her, imagining what would happen if your local farmers market started a food truck.
We launched three weeks before the world shut down in 2020, which would have been the perfect excuse to walk away and stick with what we knew. But we believed in bringing fresh, flavorful food into a food truck world that leans heavy and greasy, so we kept going. Every wrap is cooked fresh to order, built on crisp produce, because fresh ingredients are the one thing we refuse to compromise on.
Today Capital City Wraps shows up for corporate lunches, family gatherings, schools, and active crowds who want clean handheld meals without slowing down the room. Whether it's our Classic BLT β a nod to the sandwich mom used to make β or a Mediterranean wrap, the goal is the same: food you're proud to eat and proud to serve your kids.
We wanted a food truck that made healthy cool again.

Your Wrap Team
The People Behind Every Fresh Wrap
From the window to the prep line, our team keeps orders moving fast without cutting corners on freshness β so your group gets crisp, made-to-order wraps and salads without slowing down the room.
David
Senior Booking Agent
David plans wrap service with an eye trained on much bigger numbers β 30 straight days feeding Chevron crews 1,500 meals a day and a Covid-era run keeping FedEx fed at roughly 1,200 meals a weekend, so a fresh, portable wrap menu for an office or active crowd is well within his forecasting range. If equipment fails mid-event, he's the one who shifts service from truck to buffet without losing the room, and his work behind Colorado's statewide health and fire reciprocity bill keeps local red tape from slowing wrap service down across jurisdictions. Our team helps plan wrap service around timing, guest count, and setup, with David making sure lunch stays clean, easy, and on schedule.
Brandon
Senior Booking Agent
Twelve years of food truck and catering logistics sit behind Brandon's booking work, with hospitality starting points at Red Robin and Isle of Capri in Black Hawk that included front-of-house, expediting, and banquet setup before he moved into wraps and events, plus 6 years directly on trucks, smokers, and live kitchens. He's helped plan service for Amazon, Starbucks, the Denver Broncos, the Denver Nuggets, Southwest Airlines, Harvard, and Texas A&M, and knows the Denver, Fort Collins, Miami, Fort Lauderdale, Boston, and San Francisco markets well enough to keep wrap service fast, clean, and ready for offices, schools, teams, and active crowds. He screens every catering team on service quality, public reviews, food quality, and presentation, and his standing advice to hosts is to keep the menu simple so easy lunch service never slows down the room.
Jess
Food Truck Booking Agent
With 4 years of hands-on kitchen and truck experience across more than 8 cuisines, Jess brings that background to planning fresh wraps for busy events, always weighing demographic mix and service style rather than headcount alone. She's helped coordinate large-scale service for a 5,000-guest Southwest Airlines event and, across a 5-day stretch, supported 10 trucks running 50 events for about 7,500 guests, with each truck stocked on correct menu and inventory. Jess also checks insurance, safety compliance, references, and fire-risk gaps ahead of time, part of how our team helps plan wrap service around timing, guest count, and setup.
John
Food Truck Booking Agent
For offices and teams that need fresh wrap service to run without a hitch, John is the one aligning permitting, parking, COIs, and timing behind the scenes β grounded in permit and fire inspection work in Denver and event support across Los Angeles, Orlando, Miami, Sacramento, and Washington, DC. His planning advice stays simple: guest count, service speed, setup style, and budget matter just as much as the menu, which is how he keeps easy lunch service moving even when logistics get tight. That mindset held when a trailer's tow vehicle lost a radiator hose heading to an Ontario event β he arranged a replacement truck and got everything there on time, earning a rebooking the following year.
Kaleb
Food Truck Booking Agent
Fresh wraps for busy events still need a truck that shows up, which is why Kaleb won't book one for your office or team without checking current fire extinguishers, valid health and fire licenses, and labeled, organized coolers first. His 6 years in food service, 5.5 of them hands-on in kitchens and on trucks, showed when a catering truck's wheel bearing failed en route to an event and he had a substitute rolling in under 20 minutes with no gap in service. That same steady coordination let him shift a 200-guest wedding from buffet to food truck service with only 30 minutes' notice, proof he can keep clean handheld meals on schedule no matter what changes last minute.
Simon
Food Truck Booking Agent
With 10 years in catering behind him, Simon pairs 7 years of hands-on truck operation with 3 years leading prep kitchens, giving him a firsthand feel for how Capital City Wraps can keep clean handheld meals moving through a line. His experience covers recurring Southwest Airlines service for roughly 1,200 employees per event and brand projects with Kroger, Amazon, and FedEx, plus a fall festival that jumped from an expected 100 guests to nearly 300 β Simon simply drove back for more inventory to keep the food fresh and tickets on schedule. He brings that same fire-safety awareness and menu-streamlining eye to planning wrap service built for offices, schools, teams, and active crowds.
Stephen
Food Truck Booking Agent
With a dozen-plus food trucks and a 12-truck operation behind him, Stephen brings a dispatcher's calm to every wrap booking, having covered 1,000+ guest corporate events and days topping 3,000 meals served. He's the one who got a re-hitch crew out to a stranded catering truck and still made service with 50 minutes to spare, so on your event day he's already thinking through timing, guest count, and setup for a clean handheld lineup. His steady rule for keeping the line moving: two entrΓ©es, no more, no less.
Thomas
Food Truck Booking Agent
Office wrap orders get the same scrutiny Thomas applies everywhere: COIs, permits, insurance minimums, and a truck's track record all get reviewed against Denver Department of Public Health & Environment and Denver Fire Department standards before it's cleared for fresh wraps for busy events. His eye for execution shows in the details, like wrap assembly that holds up for professional or active groups, and in the day he traced a mid-event generator failure to a low-oil safety cutoff, topped it off, and kept lunch service moving within minutes. His planning advice stays consistent no matter the crowd: plan the service flow, not just the menu.
Zo
Senior Booking Agent
Zo evaluates every wrap booking the way he built his career: hands-on, having spent about 16 years running trucks, smokers, and kitchens before moving into thousands of catering and food truck bookings. He holds a culinary degree and ServSafe certification, with past work alongside Quest Diagnostics, Monster Energy Drink, St. Joseph Hospital, and NFL LA Chargers staff, plus a proven ability to handle pressure β including one day coordinating eight large holiday events with a minimal crew. That same standard shapes how he plans clean handheld meals for offices, schools, and active groups, always mindful of fresh prep and Douglas County and Castle Rock fire expectations so service stays easy and the line keeps moving.
